Today is Four Foods on Friday # 26 It's all about eating out, which is my favorite thing to do! Here are today's four questions: 1. When going out to dinner what items do your order? Appetizers, soup, salad, dinner, dessert. About the only time I order an appetizer is when eating at an Indian restaurant as I love samosas! I always have dessert at my favorite French restaurant because the desserts there are divine and I like meals that come with a salad, but I typically keep it simple. 2. How predictable are you when eating out? Do you usually order a meal that you’ve had before or do you like to try new things? It depends, at my favorite Mexican restaurant, I order the same thing each time- The Chicken Enchiladas Mole. But at other places, I like to try new things. 3. When eating at a restaurant, what beverage do you like to order with your meal? I always get unsweetened ice tea or a beer. 4. Name a meal that you ate at a restaurant that you liked so much you tried to recreate it, as well as the name of the restaurant and the recipe. Hmmm...this is a bit tough, but, my version of Green Chili Chicken Enchiladas came about after eating a chicken dish at Don Pablos. I don't recall the name of the dish (this was many moons ago and I don't eat there anymore) but the chicken dish had a creamy type sauce with a distinct flavor I just had to duplicate. So, I went home and experimented and this is the recipe that resulted! I now do this in the crock pot, makes it much easier. 1 can cream of onion soup 1 can cream of chicken soup 1 can cream of celery soup diced chicken (you can use canned chicken) Diced onion chopped roasted green chilies (you can use the canned green chilies) cumin seed minced garlic red chili powder cumin powder fresh cilantro corn tortillas grated cheese sour cream I mince some fresh garlic and saute it with olive oil and cumin seed...I let some of the garlic get a bit brown Then I place the canned soups, chopped green chilies,chicken, onion, and sauted garlic in the crock pot and cook on low 4 or so hours. Right before I am going to put it in a casserole dish, I add red chili powder, cumin powder, chopped fresh cilantro and a couple tablespoons of sour cream, stir it up well. In a rectangular casserole dish, wipe bottom and sides with olive oil. Lay down corn tortillas, completely covering the bottom of the dish (I over lap them a bit so the bottom of the dish is not visible) Then scoop some of the mixture from the crock pot to make a layer, top that layer with cheese, another layer of corn tortillas, mixture and end with a layer of cheese. Bake at 375 for about 45 min (or until cheese is bubbly and the tortillas on the edges are crisp...allow to cool a good 30 minutes before serving) Serve with refried beans and an avocado salad and some homemade margaritas! YUM!
